A tasty all-in-one breakfast that's perfect to cook in the embers of a hot fire.
4 large potatoes, suitable for baking
Knob of butter
4 rashers of bacon, cut into small pieces
200g grated cheese
Fresh parsley, chopped
salt and freshly ground black pepper
Bake the potatoes until almost completely cooked (about an hour) in the fire, and leave to cool a little.
Carefully cut off the top third of each potato and then scoop out the middle of the potato with a spoon to make a "bowl" (You can leave the potato as thick or thin as you'd like, but remember, the more room you take out, the more room for eggs, bacon and cheese!).
Place large knob of butter in the middle of each bowl. Then gently break an egg into each bowl, careful not to break the yolk.
Top with bacon, cheese, parsley, and then season with salt and pepper.
Wrap in foil and place in the fire (or oven) for 25 minutes (or until the egg whites are set).
