Chicken and Chorizo Stew

This delicious recipe is really quick to make and is perfect for one-pot cooking over a campfire.


(Serves 4)

4 boned and skinned chicken thighs
200g Chorizo
1 red onion
2 cloves garlic
1 tin butter beans
1 tin chopped tomoatoes
1 jar passata


1. Slice the chorizo thinly and pop in your one pot. Don't worry about oil, the chorizo has enough fat that it's not needed.

Finely chop the onion and garlic and add these to the pot as well.

2. Roughly chop the chicken and add to the pot.

Stir occasionally, and cook until the chicken starts to brown.

3. When chicken is browned and the onions and garlic soft, add the chopped tomatoes and butter beans.

Simmer over the fire for 15 mins or so, until thickened.

4. Check the stew and add if it's too thick, add some passata.

Serve with crusty bread and a glass of red!
