A ridiculously easy, rich beef stew - perfect for a spring evening.
1 tsp butter
2 garlic cloves, chopped
1kg minced beef
8 bacon rashers, chopped
2 large onions, chopped
8 large tomatoes, roughly diced
4 medium carrots, diced
2 tsp fresh thyme or 1 tsp dried thyme
½ tsp smoked paprika
2 tbsp cider vinegar
1 tbsp tomato puree
Salt and black pepper
2 tbsp wholegrain mustard
Chopped fresh parsley to finish
You can't get much easier than this for campfire cooking!
In a large pot, melt the butter and add the onions and garlic, stirring until they soften and start to brown.
Add in the beef and bacon, and continue cooking until they also start to brown.
Then, just throw the rest of the ingredients, except the parsley, into the pan and simmer for 2-3 hours (or longer if you like).
Serve with a sprinkle of parsley on top.
